I’m always looking for new and easy ways to cook cauliflower, I’ve recently become a huge fan. This recipe fit the bill for not only being easy, but tasty! I made this for my mom, alongside a Sausage and Kale Sauté, and she had seconds. This recipe is pretty versatile as well, it would go well with chicken, beef, even fish.

  • 1 large head of cauliflower
  • 3/4 cup of mayonnaise (I used olive oil mayo)
  • 1/4 cup grated Parmesan
  • 1/4 cup water
  • 2 cloves garlic, minced
  • sliced scallions for garnish

Preheat oven to 400 degrees. Cut off the bottom stem of the cauliflower, and the leaves. Place into a shallow, microwaveable, and oven safe dish. Pour water into the bottom, and microwave for approximately 8 minutes, until the cauliflower is slightly steamed. While it is in the microwave, mix the mayonnaise, Parmesan, and garlic in a bowl. When the cauliflower is done steaming, baste it with the mixture. Bake for 15-20 minutes, until it becomes golden brown. Top with chopped scallions.
