I absolutely love fried rice! Being half Japanese, I grew up eating mass amounts of this stuff. It’s been one of the more difficult things to stay away from on this low-carb journey. So when I found a recipe that called for using cauliflower “rice,” I had to give it a try!

  • 1 pound of ground sausage
  • 1 head of cauliflower
  • 1 cup of shredded carrots
  • 2 eggs
  • 1/4 cup of chopped green onions
  • 2 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce

Brown sausage in a large pan, and drain. Chop cauliflower and pulse in a food processor. You’re only trying to break the cauliflower into small chunky pieces. Add the cauliflower, carrots, and garlic to the pan. Add the sesame oil. Cook on medium heat until the cauliflower gets tender, approximately 10 minutes. Push the mixture to one side of the pan, and crack the eggs inside. Scramble the eggs, and toss them with the “rice.” Add the soy sauce and green onions.
